Split Pea Potato Soup

  • 2 cups green or yellow split peas (dry)
  • 2 medium sized russet or red potatoes
  • 2 carrots
  • 2 tbsp vegan BBQ sause (optional)
  • 2 tbsp nutritional yeast
  • 1/2 tsp paprika
  • 1-2 cups water (optional)

Directions: Cook split peas on the stove or in a pressure cooker until soft. Cut the potatoes into bite sized small cubes and steam for 20 minutes or until soft. Mix the split peas, potatoes, and the rest of the ingredients in a pot and simmer for 10 minutes over medium heat. Add additional water while simmering depending on your desired thickness.
